Walnut baklava is typically made with 40 layers of filo pastry dough, finely chopped milk-white walnuts from the Black Sea region of Turkey, and cooked with sweet syrup in the oven. These walnuts tend to not release as much of their fats during the baking process, thus allowing them to retain more of the flavor once it is finished cooking.
